To the Aztecs, cocoa was the “food of the gods”, but its pattern of production and consumption is far from divine. It is almost exclusively consumed where it is not produced and produced where it is not consumed.

Unlike most agricultural goods, which are cultivated to meet local food needs, nearly all of the world’s cocoa is exported.
